For our hay-milk skimmed curd cheese, the animals are provided with a traditional diet of hay, herbs and meadow grass. All calves stay with the cows, which raise them in a natural way (mother- and nurse-bound calf rearing). This particularly animal-friendly form of husbandry is costly and the Demeter hay-milk farmers are fairly remunerated.
